Eight years ago, Santiago Lopez took a leap that blended heritage, hospitality, and heart. As the founder of The Colombian Coffee Bar & Roastery, Lopez wanted to do more than serve a great cup of coffee—he wanted to tell a story. Rooted in his family ties to Colombia and a desire to support farmers back home, Lopez and co-founder, Kristin Panylyk de Lopez, humbly began their business at Edmonton farmers’ markets.
They roasted in small batches, shared stories of origin, and slowly built a following that valued both the flavour in the cup and the people behind it. By 2017, they had opened their Glenora coffee shop, turning their romantic idea into a full-fledged hub for community and connection.
From the start, Lopez emphasized hospitality over pure product. Drawing inspiration from Walt Disney’s commitment to the guest experience, he envisioned a café where customers felt cared for—where every detail, from the roasting to the welcome, made them feel special. For Lopez, coffee quality is non-negotiable, but the experience is what truly sets them apart. That philosophy has attracted a diverse clientele: locals who come for daily rituals, travellers seeking specialty coffee, and international visitors intrigued by a brand that bridges Colombia and Canada.
Yet, The Colombian Coffee Bar & Roastery’s reach goes far beyond its customer base. Lopez has made giving back a cornerstone of the business. Their annual holiday fundraiser raised nearly $12,000 last year for Ronald McDonald House, part of a long-standing commitment to local non-profits. At the same time, their direct relationships with Colombian farmers ensure that impact flows both ways—supporting producers at origin while nurturing community at home.
Today, Lopez continues to steer the company with a clear mission: to honour coffee, uplift people, and create moments that matter. With six locations in Edmonton and Sherwood Park, and an upcoming expansion in Saskatoon, Saskatchewan, The Colombian has had incredible growth in eight years finding welcoming communities in which to expand.
