Plume Bar delivers glamour and inventive cocktails
Golden light fixtures cast a warm glow on a full bar, exuding a moody elegance in a room cloaked with floor-to-ceiling curtains. Plume Cocktail Bar is busy, but it feels welcoming and intimate, like a scene from an Old Hollywood production. With delicious bites, exceptional cocktails, and live music, evenings can unfold at their own pace, says Dhruvish Patel, who owns Plume with his friend, Parth Patel. The two named the bar to reflect the elegance of its interior, drawing inspiration from the historical use of feathers.
When they first opened Plume in late December 2025, a wave of new cocktail lounges was sweeping across Edmonton, but the friends wanted to provide something distinctive, with unique offerings. โWe wanted the entire menu and everything done by our bartenders,โ says Dhruvish.


Over the course of a few months, the owners and bartenders spent hours pitching drink ideas and testing a multitude of interesting combinations. After days of discussion and trial and error, for example, they created a popcorn syrup. Itโs one of the ingredients in the Phoenix Ashes cocktail, and despite mingling with other heady components like bourbon and bitters, the syrup’s flavour and aroma remain noticeable. Each week, the mixologists spend a couple of days organizing for the following week, prepping garnishes and creating components like the kiwi puree for the Emerald Cascade and the passionfruit syrup for the Barbed Velvet.ย
The teamโs commitment to developing enticing cocktails that were both easy to execute and looked Instagram-worthy paid off. When it worked, it was magic. The Feather and Flight, a mix of amaretto milk-washed with pistachio ice cream, Chartreuse and fresh lime, is a perfect example. โI am not normally a bourbon drinker, to be honest,โ Dhruvish says, โbut with the pistachio [ice cream], it was so balanced that it became one of my favourite drinks.โ
One of the benefits of having the bartenders so involved in menu creation is that not only can they help customers with questions about the cocktails, but they can also create drinks based on requests. โWe put a lot of hard work into the menu, but we want to have an open mixology program, as well,โ Dhruvish says about meeting clientsโ needs.ย

While an Old Fashioned or a classic martini are popular choices, the Vanis Kiss, featuring Empress Elderflower Rose Gin, Chambord, and ginger beer, has become one of the best sellers.ย
Creative cocktails are front and centre, but unique small plates from charcuterie boards to salmon crudo were designed with pairing in mind. As if that werenโt enough, the owners added a twist almost unheard of in this city: a complimentary chauffeur service within five kilometres of the bar, including Rogers Place, because savouring the care and craft behind each cocktail shouldn’t mean worrying about the drive homeโor missing the game.
